Our guanciale undergoes a simple yet time-honoured curing process, treated with a delicate sea salt cure infused with toasted Tellicherry and crushed juniper. This careful preparation allows the natural porky richness of the meat to shine, resulting in a product that’s bursting with robust flavour. Its name is derived from ‘guancia’, the Italian word for ‘cheek.’ Each piece is sourced from the cheeks of locally reared free-range rare breed pigs, ensuring unparalleled quality and flavour. Although a versatile cut, guanciale is a traditional meat used in preparing a carbonara. It’s also excellent for adding to casserole dishes or wrapping around poultry.
