Our bone-in pork loin joint is lean but topped with a generous layer of fat for that much-loved crackling. Cut from the loin, it comes ready scored for the perfect crackling − just make sure the fat is really dried out before rubbing in plenty of salt and olive oil before cooking. It’s been butchered the traditional way by butterflying the loin and belly of pork, evenly distributing stuffing and tying in a roll – with the belly wrapped around the loin to protect it during slow cooking. Boned & Rolled Shoulder of Lamb (2kg)
Our lamb shoulder is meltingly tender, and boned, rolled and hand-tied by our butcher for ease of carving. Cut from the shoulder of our finest free-range grass-fed lamb, it is laced with delicate layers of fat that melts in the meat when slow cooked, resulting in that much-loved tender, succulent and rich meat. We recommend pot- roasting this joint with fresh herbs, lemons, white wine and seasonal green veg to make an aromatic and delicious meal. We source our lamb from a selection of Somerset farms, depending on availability and quality. Tom Eames is our main lamb farmer and maintains excellent husbandry standards which ensure strong, healthy livestock. All of our lamb matches our sourcing criteria of being grass and forage fed and reared in high-welfare conditions. Clare, Tom’s wife, is a livestock vet so she’s in the perfect position to keep a good eye on things.
Whole Pancetta (200g)
Our pancetta comes from our pals over at Somerset Charcuterie. It’s cut from the belly of the best pork in Somerset and hung from an oak frame in a drying room for around three weeks. We have a close relationship with Somerset Charcuterie, who supply us with some the UK’s finest chorizos and salamis. Made in salt chambers in specialist hanging rooms, the flavours and texture of this award-winning charcuterie are unique. Once opened, consume within three days.
3 Joint Chicken Wings (800g)
Our Three Joint Chicken Wings brings an extra boost of goodness to your meal. The drumette offers a meaty bite, the wingette provides a balance of meat and skin, and the tip adds a bit of crunch and flavour. This melt-in-your-mouth brisket has been submerged in a pickling liquer featuring a carefully balanced blend of spices, bringing out subtle hints of mustard, cloves, and chilli. It is a savoury indulgence best served at buffets after being gently simmered until fork tender and is incredible when layered with mustard and pickles to create a deli classic – the salt beef bagel.Our beef is sourced from the best independent cattle farmers in England. Cows are slow-reared in extensive farming systems that care for the animal and the planet, where they spend at least two seasons at grass eating a mostly grass and forage diet.
