Our guanciale undergoes a simple yet time-honoured curing process, treated with a delicate sea salt cure infused with toasted Tellicherry and crushed juniper. This careful preparation allows the natural porky richness of the meat to shine, resulting in a product that’s bursting with robust flavour. Its name is derived from ‘guancia’, the Italian word for ‘cheek.’ Each piece is sourced from the cheeks of locally reared free-range rare breed pigs, ensuring unparalleled quality and flavour. Although a versatile cut, guanciale is a traditional meat used in preparing a carbonara. It’s also excellent for adding to casserole dishes or wrapping around poultry.

Our Oak Smoked Gigha Halibut is smoked to order to ensure exceptional flavour. After careful selection and harvesting, the halibut is cured and rested for 24 hours. After resting, the fillets are traditionally oak smoked using chips from whiskey barrels (located from the Kilchoman Distillery, on the nearby island of Islay).
